Hey everybody!
When I say it’s that time of year, I’m not talking about all the pumpkin spice lattes and all that fun stuff! It’s hunting season for my us!
We have been blessed this year with our freezers getting full! My husband filled his elk and one of his antelope tags. We still have 3 more tags to fill so let me tell you we are going to be eating a lot of venison this year! So far since about September, I haven’t had to buy any meat from the store which is huge because meat gets expensive.
I have been trying to incorporate more venison into our meals and just replace it in recipes that call for beef and sometimes chicken. There are a few recipes that I’m not sure about replacing chicken with venison. I wanted to share with you a fee ways we like to use it! I will add the recipes at the very end.
⁃ Meatloaf - great way to use up burger meat. Lots of different recipes on Pinterest! I’m still trying to find a favorite for us.
⁃ Burgers - I will make up a 5 lb batch for us and throw them in the freezer for a quick easy meal. I don’t necessarily have a recipe for it, but I will share with you what I have added that is pretty tasty!
⁃ Teriyaki steak - this is delicious and quick! Much thanks to my friend sharing her recipe with me! I will add it.
⁃ Fajitas - just slice up some onions and peppers quick and throw some taco seasoning with venison steak. Very delicious!
⁃ Anything that calls for ground burger meat! I feel like there isn’t even much of a taste difference once you add spices to the meat. People hardly notice it’s venison!

Burgers
• 1 egg per lb of meat
• 1 cup of bread crumbs per lb of meat
• Ketchup
• Bbq sauce
• Worcestershire sauce
• Liquid smoke
• Garlic powder
• Chopped onion
• Salt
• Pepper
• Cayenne - just a little for some spice!
Directions:
• This is what I added the last time I made burgers. They tasted almost like meatloaf or meatballs, but they turned out pretty good! I’m sorry I don’t have exact measurements. I just went by the smell and added as I went.
• Mix all together and shape into burger patties.
• I put them on parchment paper and stick them in the freezer to harden a little so I can put them in zip lock bags.
Teriyaki Steak
• 8-10oz meat (1lb would probably be fine. I just never have that much in a package of steak pieces)
• 1/4 cup brown sugar
• 1/4 cup soy sauce
• 2 Tbs apple cider vinegar
• 1/2 tsp ginger
• 2 cloves of garlic
• 1 tsp corn starch
• 1-2 tsp sesame oil (not necessary but I like it!)
• Rice
• Broccoli
Directions:
• If needed cut steak into bite size pieces. We cut these when we butcher and I just have packages of steak pieces. This was originally a chicken recipe so you can use chicken too!
• Cook steak in skillet. I use olive oil to cook in. Season with salt and pepper.
• In a bowl, combine sauce ingredients.
• Pour mixture over meat and simmer until glazed.
• Serve mixture over rice and broccoli.
